The Bikini Cocktail

Serves 10 people

To make the Citrus Syrup (yields 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Premix (produces 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Method

To prepare the Syrup: Combine the listed items into a saucepan, bring to a gentle boil, mixing so the sugar melts. Then, turn off the heat allowing it to reach room temperature entirely. Pour to a sterilised bottle, seal and store in the fridge, it can be stored for about four weeks.

Preparing the Premix: Mix every liquids into one big jug, let it rest for one hour, then strain preferably using muslin, so it's perfectly clear.

To serve: Measure 85ml of the batch mix to a mixing glass packed with ice, and stir gently for one minute to chill. Strain into a chilled martini glass or similar, garnish with a few cranberries and complete it by giving it a quick spritz of the essential oil over the top.
